Spiced lamb in pitta bread. A fresh lamb stuffed sandwich, this is such an easy one for a sunny day! I made this one day instead of making lamb koftas and it is now one of our favourite quick meal! I used lamb but you could substitute it to beef of turkey mince if you prefer! Here is how I made it! 💖💕
Serves 4
500g lean minced lamb
20g fresh mint leaves, finely chopped
25g fresh coriander, finely chopped
1 tsp ginger paste
1 tsp chilli powder
2 teaspoons ground cumin
2 teaspoons ground coriander
2 teaspoons paprika
1/2 teaspoon cayenne pepper (optional)
2 teaspoons salt @cornishsea_salt
3 tablespoons olive oil @odysea_ltd
150g feta, crumbled
Few slices of red onion

In a small bowl mix in the ginger, chilli, cumin, coriander, paprika and cayenne pepper lemon juice and olive oil. Season and add the mix to the mince and mix well together using your hands. Add the parsley, mint and mix well and set aside. I marinade my mix for a few hours to give it more flavours, but you can cook immediately if you don’t have the time. Cook the lamb mix in a frying pan, stir the mince to break up lumps, for 10 minutes or until browned. Fill the pitta bread with the mince and add some feta and red onion. I served mine with french fries from @mccainukie, and salad. Enjoy! Don’t forget to save and share 🌱💖
